This meat dish will cook relatively quickly as the mince layer is thin and the quinoa and inner layer are already cooked.  The dish is cooked when the mince pulls away from the edge of the dish.  This is a tasty dish.


2 cups cooked quinoa

1 k mince

¼ tsp allspice

1/8tsp nutmeg

1/8 tsp cayenne

2 tsp salt

1/8 tsp black pepper

¼ cup sesame seeds

2 Tbs olive oil



1. Knead mince and quinoa

2. Add spices and seasoning

3. Divide mixture in half and spread one half in oiled cooking tray.

4. Cover with stuffing and top with remaining meat mixture.

5. Smooth down, cut diamond patterns and sprinkle with sesame seeds

6. Cook in a good sun for about 40- 60 mins.



2 Tbs olive oil

2 Tbs pine nuts

1 large onion

125g mince

1/8 tsp allspice

½ tsp salt

¼ tsp black pepper

2 Tbs finely chopped mint



1. Fry onion, pine nuts and mince separately, cooking mince

2. Drain excess fat and mix in the other ingredients.
