2 Lamb Shanks

1 tin of tomatoes


1. Rub meat with seasoned flour and fry till just brown in a frypan.

2. Place meat in a casserole with tinned tomatoes and cover with lid.

3. Place in the solar oven and cook till meat is falling off the bone.

4. Serve with brown rice, cooked concurrently, equal volume rice and water, with the lid on.


Notes: I didn’t actually brown the meat to start, just put it with the tomatoes. I used tomatoes from our garden, they were dehydrated in the solar oven then frozen. I just broke off what I thought was the equivalent of a tin of tomatoes. My taste testers were amazed!
